WHAT WE DO The Sourdough School is a research institute for the study of the nutrition and digestibility of bread. The school is run by Vanessa Kimbell – baker, best-selling author, a regular contributor to the BBC4 Food Programme, researcher and teacher. It is at the Sourdough School that we research, develop and create sourdough bread – but it is more than just bread, and it’s more than just a school. Over the last few years, the gut microbiome and its role in supporting digestion and our mental and physical health has been one of our main areas of research. HOW WE TEACH YOU TO MAKE SOURDOUGH The Sourdough Club is where we teach you how to make our amazing bread. It is the part of The Sourdough School where we share our recipes, tutorials, tips, lessons and support you so that you can learn how to make Sourdough where ever you are. WHY ARE WE DIFFERENT? Here at the school Vanessa and the team have taken the most up to date scientific findings and applied them to sourdough and other fermented foods, working towards our mission to scientifically prove that sourdough and gut-friendly nutritious food can have a positive impact on our physical and mental health. THE SCHOOL: The Sourdough School is more than a cookery school. It’s about sharing incredible scientific knowledge about the connection of bread and our gut microbiome. It’s supported by a network of medical professionals, scientists, wheat breeders, nutritionists, specialist bakers, researchers, academics and we’ve been pooling the research on sourdough & fermentation from all over the world into a central point. We develop recipes, techniques and formula’s as our aim is not just to study, but conduct our own research on formula’s & grains and fermentation and to share what we find. It’s about applying evidence and the practical application of fermenting and baking into delicious, affordable nutritious bread recipes to bake, to eat and to enjoy. The Sourdough School has featured in the 3 BEST courses in the UK in the Sunday Times and in The Telegraph top ten baking courses in the UK, as well being included in the London Evening Standard top course in the UK. Each year the Sourdough School has: Research and development workshops working on different themed areas from bread and guts, sourdough for non-coeliac gluten sensitivity, IBS, blood sugar management, sports and mental health. An annual week-long diploma focusing on in-depth analysis on bread and guts. Research study groups with renowned neuroscientists, wheat breeders, microbiologists, scientists and medical professionals. Her own research development kitchen applying the scientific findings about bread and fermented foods to create new bread formulas and recipes. A clinical study as part of her PhD working with De Montford University and baking innovation group Puratos. The school also has an online offering called the Sourdough Club where people can learn how to make sourdough online via in-depth video masterclasses hosted by Vanessa. Until easter this year our we held RCGP accredited for our nutrition and digestion of bread diploma. We decided not to renew our subscription to allow for longer courses that included more baking.

The kitchen is the root of it all, serving a daily menu of breakfasts and lunches that are equal parts healthy and indulgent. From daily stews and sandwiches, to cakes and mac 'n cheese, we love feeding people and creating fresh salads and smoothies that put a smile on your face and nourishment in your body. As part of the holistic experience, we built a space upstairs that is calm, nurturing, and safe; this space is the Beetroot Sauvage Wellness Centre, offering a variety of yoga classes and therapies. All classes focus on gentle movement that not only stretch and relax the body, but allow you to feel into it, explore and perform self-enquiry into your emotional and spiritual needs. A space to rest and focus inward, to thank the body, and to draw close attention to healing. Along with a weekly schedule of classes, we have a variety of therapists, whose knowledge of healing the body is rooted in their own journey, training and experience. They blend sensitivity and magic to create a safe space that allows you to honour your needs and embrace rejuvenation with full intention. In addition to our focus on the kitchen and the body, we have our little slice of heaven, our city sanctuary garden: a rustic space that you can dance in, eat in, laugh in, or bring plants and garden in. As often as possible we have musicians playing live music on Sundays and we thoroughly encourage dancing if you feel so inspired. We do!

Great and necessary course for anyone working with young people. Cheryl is an excellent instructor. Thank you! Excellent use of personal stories to help use as examples to explain the different types of mental health. Cheryl was patient and supportive with technical glitches. Useful having her phone number to text. Cheryl was knowledgeable and gave us confidence in our approach to a young person in crisis in the way we can try to help and support them. The course was informative, and I found the individual learning actives and tasks accompanied with the teaching worked extremely well. The videos provided were engaging and remained focussed on the topic. I particularly felt Cheryl dealt with some of the topics that were difficult, with a high level of sensitivity and care. There was briefing prior to some of the topics. I would have possibly liked a debrief however I believed the course was excellent and I feel it will be so important for my organisation in supporting with our service users. It has now prompted me to continue further learning around mental health and building on what I have learnt from the course. Thanks to Cheryl again for her delivery of the course and demonstrating her passion. Really enjoyable and engaging course...really useful for me going forward The course is very good at highlighting all the different aspects of mental health. it doesn't just talk about depression but all the other areas that affect young people. My story. Hmm. Writing my story caused a great deal for me and this was the last section I completed on the website. Why? There are 2 reasons: I am reluctant to talk about myself. I am an introvert and observing others while I complete my internal thinking processes is the way I operate. I value honesty but I am also very private. I generally want to support others and being vulnerable about my own struggles is difficult for me as I don’t want to be a burden for others. Or if I achieve great results, I also tend to stay modest as I don’t want to “show off”. This behaviour is something I had to work on during my adult years, however I still carry traits. I also do not like to talk a lot. I always just say as much as necessary to give the information needed. I am very curious and insightful, I typically strive to move past appearances and get to the heart of things. I am reserved and quiet. But not shy. When I communicate, I do that with warmth and sensitivity. Other times, I speak with passion and conviction. My personality is reflected greatly during my coaching sessions as I possess exceptional listening skills, I understand peoples’ true motivations, feelings, and needs. I pick up key words and I observe my clients through all my senses. I listened to many great speakers, coaches, mentors, leaders, writers sharing their stories where they related to their audience and connected their purpose to their own lives. I admired them and I understood that sharing my own story can make a huge impact on how I express myself and how I introduce myself to my audience. I really wanted to select a story that truly aligned with my values rather than one that offered me status or material gain.

Heatherwood's Equestrian Academy is available for private & small group lessons or you may join us for one of our week-long summer day camps. The Academy teaches safety around horses, horse anatomy, proper grooming, feeding and housing, equipment use and learning to "tack up" a horse. Riding covers proper seat, leg and hand position as well as learning to walk, trot and canter using correct diagonals, leads and gait. Each rider will be assessed to determine the pace at which they will advance to the next level. Heatherwood's goal is not only to teach horsemanship to our students, but to foster a bond between the rider and horse in order to develop a sense of awareness and sensitivity to the special attributes of their relationship. Every animal and guest at Heatherwood is treated with respect and kindness. Children often gain self-confidence and independence in their abilities to care for themselves and our animal friends. Private & Small group lessons - Offered in eight week sessions consisting of a 1/2 hour session each week. Small groups consist of two riders. Riders should plan extra time both before & after each lesson to help groom & tack up their horse if able to do so. Heatherwood facilities offer indoor & outdoor riding arenas for year round instruction. We also take students on our riding trails. We welcome adult & child riders of all levels, from beginners to those ready to advance to jumping. Whether you want to learn to ride for pleasure, advance to horse shows, or ride for an excellent way to exercise, Heatherwood Academy will tailor a program for your interests. Birthday parties - For up to ten children with riding lessons given for the party guests. We provide the cake, drinks, & decorations.
